The story

Don Javier Delgado Corona built this at his bar La Capilla in the town of Tequila, Jalisco, in 1961, and kept stirring it himself with whatever long knife was on the bar for decades after. It's basically a tequila Cuba Libre, but the blanco spirit and the knife-stirred ritual are what keep it a serious order rather than a gimmick.
